Time to fire up the smoker, Saturday September 13th. Using Dry Rub on about 34 pounds of pork shoulder (pork butt). Removed most of the fat cap on Friday night, dry rub (at least 4 cups, or about 1 cup per shoulder), wrap in clear wrap and refrigerate over night. Out of the fridge at 4:45AM and on the smoker by 5:10am.
